 Babkea Cake

Ingredients:
40 gr fresh yeast     For Crumbs:
1 c lukewarm milk     2 tbsp flour
1 tsp sugar     1 tbsp margarine
4 c flour     1tbsp sugar
2 eggs     1 bag of vanilla sugar
100 gr soft margarine     
1/4 c sugar     
50 gr raisins     
Grated peel of 1 lemon     

How to:

Melt the yeast in lukewarm milk and add tsp of sugar.

Put the flour in a big bowl and make a "hole" in the middle, in hole pour the yeast mix. Cover with some flour from the edge of the bowl and let it stay for 10-20 minutes.

Add the rest of the ingredients and knead for 10 minutes until dough is smooth & flexible.

Shape the dough into ball, and put in pan, cover and let it rise in a warm place for an hour (or until the dough doubles its size).

For the crumbs coating: mix all the coating ingredients and spread on the cake.

Heat oven to 180°c and bake cake 45 minutes.
